TCIF: THE Carrot Cake

It is more than possible that carrot cake is my favourite cake… ever! When I am confronted by an array of cakes to choose from I find it very difficult to sway away from the enticing piece of cream-cheese-covered gorgeousness that is the Carrot Cake. I am not a lonely fan, many of my friends agree that “you can’t beat a piece of carrot cake”. Last week I was asked to make one as a birthday gift so it seemed like the perfect opportunity to include my recipe for you all to try and enjoy. Yes I am biased, but this really is the best carrot cake EVER!
Ingredients: The Cake
Makes 8” square tin
175g grated carrot
30g desiccated coconut
50g raisins
1 large apple grated, (no peel)
100g crushed pineapple
190g sugar
1 teaspoon cinnamon
240g plain flour
1/2 teaspoon salt
1 teaspoon baking soda
2 large eggs
130g vegetable oil
Pro Tip: You can make the whole of this recipe by hand but it’s wise to have a good wooden spoon to hand and some serious upper arm strength!
