Having denied myself the simple pleasure that is chocolate for about 25 years I am seriously making up for lost time. Any meal out is an excuse to indulge in some sort of chocolate pudding, or failing that, just plain old after dinner chocolates. I have gone through the crazed binge stage and now I am refining it and have been looking for the best you can get.

I am confident that my next recent find is potentially the BEST chocolate bar ever!

It’s called Crushed Diamonds, by chocolatier Chocolate and Love. The superb bar is a 55% cocoa, organic dark chocolate bar, made from Fairtrade cooperatives in the Dominican Republic and Peru, combined with cane sugar, milk and crushed cacao nibs (the inside of the cacao bean). It has the most silky-smooth texture that is flecked with the crunchy, slightly bitter nibs. The amazing quality of the chocolate means it melts quickly on the tongue with an intense rich flavour that, due to the sugar content, is not too bitter.

This, as far as I am concerned, is the pinnacle of chocolate-bar-making! And, as if to prove a point, it has recently been awarded a Gold 2-star in the Great Taste Awards 2011.
