Noodles With Soya Sauce & Spring Onions

Our regular food columnist John Gregory-Smith founder of The Mighty Spice Company (www.mightyspice.com) gives us another healthy recipe.
Serves 2
• 300g egg noodles
• 200g minced pork
• 1 red onion, finely chopped
• 1 clove garlic, finely chopped
• 4 spring onions, finely sliced
• Handful of edamame beans
• 2 tablespoons light soy sauce
• Pinch of sugar
Method
1. Boil the noodles in salted boiling water as directed on the packet, drain and return to the pan. Pour in a tablespoon of oil and the same of light soy sauce, mix well and set aside.
2. Whilst the noodles are cooking heat the oil in a large wok and stir fry the pork with the red onions for 8-10 minutes until they are golden and the pork has cooked through.
3. Chuck in the garlic and stir fry for another minute.
4. Add a pinch of sugar, the light soy sauce and edamame beans mix everything together.
5. Serve pork on top of a mound of the noodles with the chopped spring onions scattered over everything.
