Ingredients: The decoration

1 jar of lemon curd
1 lemon
8-10 tablespoons icing sugar
1 small plastic food bag

Preparation:
Add a little bit of the lemon juice and zest to the lemon curd if you like and spread generous amounts onto half of your cake when it’s cooled.

Place the other half on top and spread with more curd.

Squeeze the juice of 1/4 of the lemon and mix in the icing sugar and add more icing sugar if your drizzle seems a bit too runny.

Put the drizzle into the bag, snip a tiny bit off the bottom corner and use as a piping bag to get creative!

All that’s left to do is portion and serve it… and get back to sunbathing!
