Peanut Butter Ganache Chocolate Cupcakes

You can’t get a cup of coffee these days without being wowed by the array of cupcakes that are on offer. Unfortunately they can sometimes be a bit disappointing and dry.

However this recipe is exceptionally easy to make and actually lives up to the cupcake name as I’ve given you the recipe in cup measurements, which in my mind are a far easier and quicker way to bake!

Pro Tip: I like to use a peanut butter that hasn’t been sweetened so I opted for Natures Harvest. But you can use just as easily use your favourite brand the results will be just as delicious.

Also, I prefer to make the ganache first so that it has time to set up before piping

Makes 16 large cupcakes

320g chocolate
330g whipping cream
100g peanut butter

Break up the chocolate into small pieces and place in a small round bottomed bowl. Bring cream nearly to the boil and add 1/3 cream to the chocolate, stirring in small circular movements. Next add the next 1/3, again stirring in small movements, and finish with the last 1/3 making sure all of the chocolate is melted. Finally add the peanut butter and hand blend to a smooth consistency and leave to crystallise at room temperature.

N.B. Crystallise means that the chocolate is setting
