Jean-Georges Vongerichten’s London restaurant, Spice Market, has introduced an exclusive monthly masterclass programme.

The class is taken by Chef Brett Crowe, who specialises in cooking Asian-inspired cuisine using French techniques that he has perfected over the years of working under Jean-Georges.

I went along to the The Spice Market in the W Hotel to try it out, and have the chance to learn the secrets behind some of their most successful dishes, under the very talented eye of Executive Sous Chef Brett Crowe.

The session starts with an informal brunch, and as it is nestled in Chinatown we head along there to shop for ingredients with Chef Brett. Now I thought I knew Chinatown well, as I live near and buy ingredients from there a lot, but this was a real education in itself and the perfect opportunity to ask Chef Brett “What’s that and how do I cook it?”

After a great browse we head back to the restaurant to begin our cooking, but we do this with a cocktail in hand (RIP Keith Floyd). The menu for the class is Salmon Tartar with Avocado, Spicy Radish and Ginger Marinade, Charred Sirloin with Soy, Garlic and Coriander and Ovaltine Kulfi with Caramelised Banana and Spiced Milk Chocolate Sauce. The maximum number of guests for the masterclass is ten, so there is plenty of time spent with everyone, to ask questions and get a real insight into the tricks of the trade of a restaurant kitchen. This food was absolutely delicious!

The tips I learnt and was most impressed by were all the ways we saw how to make sauces and dressings, these really do transform something plain into a total wow-factor dish. If you love having people over to dinner or just enjoy cooking this is such a great idea, I came home totally inspired.

We sat down to eat the dishes, which were so good, this is a real treat and discussing the techniques used with your group is fun too. We were served wine matching the dishes and given some wine tips too before heading home with a Spice Market gift bag.

The masterclass is the ultimate South East Asian-inspired cooking experience, taking guests on a culinary journey based on ideas from one of the worlds greatest chefs. The first masterclass will take place on Saturday 24th September from 12pm – 3pm and will cost £80 per person.
