Classic French Moules

Our regular food columnist John Gregory-Smith founder of  The Mighty Spice Company (www.mightyspice.com) gives us another healthy recipe.

Classic French Moules
Serves 4

2kg mussels, cleaned
1 large onion, finely chopped
2 cloves garlic, finely sliced
1 glass white wine
200ml double cream
1 tablespoon olive oil
Large handful of fresh parsley, roughly chopped

1. Tap the mussels and discard any that don’t open
2. Heat the oil in a large pan and fry the onion and garlic until soft
3. Add the mussels and white wine, cover with a lid and cook for 3-4 minutes until all the mussels have opened
4. Stir in the cream and parsley and season well with sea salt and pepper
5. Serve with French fries or a really crusty bread
