Tomato & Onion Salad

Our regular food columnist John Gregory-Smith founder of The Mighty Spice Company (www.mightyspice.com) gives us another healthy recipe.

Red Onion and Tomato Salad

Serves 4-6 as a side dish
• 1 large red onion, finely sliced into rings
• 250g fresh tomatoes, sliced (great to use different types of tomatoes)
• Large bunch of coriander, roughly chopped
• Large bunch of parsley, roughly chopped
• Juice of 2 lemons
• 2 tablespoons olive oil
• ½ teaspoon ground cumin
• ¼ teaspoon of cayenne pepper or chilli powder

Method
1. In a bowl squeeze the juice of half a lemon over the sliced red onions. Add a pinch of salt, mix well and set aside for a few minutes. This will take the rawness out of the onions. 
2. Make the dressing by whisking the remaining lemon juice, olive oil, cumin and cayenne pepper in a bowl with pepper and a little salt to taste.
3. Toss the tomatoes with the marinated onions, coriander and parsley in the dressing.
