Marbled Chocolate Peppermint Cupcakes

Few of us need very much encouragement partake of a little chocolate…or indeed a lot of chocolate! But baking with it? Well that’s a different matter.  It is so easy to sweep into a shop and pick up a the most decadent looking creation in a matter of minutes that less and less people are opting to get baking at home.

My own baking efforts rarely extend further than flicking the TV channel over to The Great British Bake Off, so I was open to ideas when it came to my attention that Dr. Oetker had commissioned Lisa Marley to create a range of exclusive recipes for ‘The Great Chocolate Bake’ – an initiative aimed at inspiring us all to push the boundaries of baking with chocolate.

Here we have Lisa Marley’s Marbled Chocolate Cupcakes with Peppermint Buttercream for you to have a go at.  Yes, they’re naughty, yes they’re an indulgence, but we have to have something to cushion the blow of falling head first from a lovely summer into autumn.

Ingredients

Makes 12 cupcakes

For the cupcakes:

Muffin cases

150g golden caster sugar

150g margarine

150g self raising flour

2 medium eggs

75g Dr. Oetker Fine Cook’s Extra Dark 72% Dark Chocolate

75g Dr. Oetker Fine Cook’s White Chocolate

5 ml (1 tsp) Dr. Oetker Madagascan Vanilla Extract

2 tbsp boiling water

For the buttercream:

250g unsalted butter at room temperature

300g icing sugar

2 tbsp whole milk at room temperatire

4-6 drops Dr. Oetker American Peppermint Extract to taste

50g Dr. Oetker Fine Cook’s White Chocolate

50g Dr. Oetker Fine Cook’s Extra Dark 72% Chocolate

For the two tone chocolate shavings:

25g Dr. Oetker Fine Cook’s White Chocolate

25g Dr. Oetker Fine Cook’s Extra Dark 72% Chocolte

To Make

- Pre heat your oven to 180˚C, 160˚C fan oven, gas mark 4 and line a muffin tray with cases.
- Over a pan of barely simmering water, use a heatproof bowl to melt the white chocolate and set aside, repeat with the dark chocolate.
- Beat the eggs and set aside. Cream the margarine and sugar together in a large mixing bowl until pale, light and fluffy. Add the vanilla extract, a tablespoon of flour and half of the eggs and combine. Add another tablespoon of flour and the remaining egg mixture and combine. Sift the remaining flour on top and fold into the mixture.
- Separate the mixture in half. To one half add the white chocolate and mix until completely combined. Add two tablespoons of boiling water and combine. Repeat with the other half of the mixture adding the melted dark chocolate.
- Fill the muffin cases just over half way with equal amounts of each cupcake mixture. Use a cocktail stick to swirl the two mixtures together, this will create a marbled effect.
- Bake the cupcakes on the middle shelf of the oven for 20-22 minutes or until they are just firm to the touch. Leave to cool completely before icing.

Buttercream

- Melt the dark chocolate in a heatproof bowl over a pan of barely simmering water and set aside. Repeat with the white chocolate.
- Cream the butter, milk, icing sugar and peppermint extract together until light and fluffy.
- When combined, separate into two bowls. Add the melted dark chocolate to one half of the buttercream and combine. Add the melted white chocolate to the remaining buttercream.
- Fill a piping bag with the nozzle already in place with each buttercream side by side so the bag is filled evenly with both.
- Pipe onto the cooled cupcakes.

Two Tone Chocolate Shavings

- Melt both the dark and the white chocolate separately as before.
- On a non-stick surface pour out the white chocolate. Spread the chocolate around thinly with a spatula. This will allow it to cool and set. Repeat with the dark chocolate on the other half of the surface and allow overlapping with the white chocolate by two inches. Allow to cool but not completely set.
- With a spatula, scrape the chocolate towards you creating shavings and curls. Use to provide the finishing touch to your cupcakes!
