The wonderfully vivacious Silvena Rowe has opened her first restaurant, Quince, at the Mayfair Hotel in London. Silvena, who is best known for writing stunning Eastern Mediterranean cookbooks, has taken classic dishes from the Ottoman Empire of Turkey and given them a modern twist for her menu.

Some of my favourites were the melt in the mouth pork belly with a slightly tart blueberry and coriander molasses, the slow cooked Ottoman style shoulder of lamb with rosemary salt and the whipped avocado hummus with black sesame seeds and coconut dukkah. All the dishes, which were prepared in the stunning open kitchen, were made for sharing – get loads, fill the table and tuck in with lots of cold wine.
