It’s a big year for apples apparently! This year’s weather has been very kind to our apple crop and produced not only more than usual but ones with better flavour and juiciness. This is a very simple way of making the most of them while they are at their best.

Ingredients: For six turnovers

1 pack ready rolled puff pastry
3 large apples
1 tablespoon of sugar
30g ground almonds
¼ teaspoon cinnamon
Egg wash
Flaked almonds
Icing sugar to dust

Place the apples in a pan and cook down

Pro Tip: Use which ever variety of apple you like – I quite like to use a selection for extra flavour.

Preparation:

Peel, core and chop the apples up, place in a pan with the sugar and a tablespoon of water – cook until soft but not to a pulp.

Cool the apple down and then stir in the ground almonds and the cinnamon.

Leave to one side and then take the pastry and divide it into six squares.

Brush a very little bit of egg wash around two side of each of the squares and place a heaped spoonful of the apple mixture onto one half of each of them.

Fold the pastry over to create a triangle and use a fork to seal the two edges together.

Place on a lined oven tray and put in the fridge for 20 minutes or until ready to bake.

Heat the oven to gas mark5 /200˚C.

Egg wash the tops and sprinkle with flaked almonds and then bake for approximately 35-40 minutes.

Once they are out dust with icing sugar and serve.

Pro Tip: Cut the apples into slightly different sizes so you get different textures in the turnover.

These freeze very well so get them to the stage before egg washing them, you can then freeze them and cook them at a later date, just remove from the freezer egg wash, sprinkle with almonds and bake form frozen, they will just take a little longer that is all.
