Yum, yum, yum Banoffee Pie… For me it doesn’t get much better than that!

So what if I made it into a cake? Well this is the result… a soft sponge, sliced banana, condensed milk tray bake cake with a crumble top. It can be easily sliced and eaten, or topped with whipped cream? Oh go on then!

Ingredients: The Crumble

10g granulated sugar
40g plain flour
¼ teaspoon salt
15g unsalted butter

Preparation:
Mix all of the dry ingredients together and then rub in the butter and set aside.

100g self raising flour
50g plain flour
150g caster sugar
¼ teaspoon baking powder
150g unsalted butter (room temperature)
45g milk
3 medium eggs
2-3 bananas
1 tablespoon condensed milk

Place the bananas upright into mixture

Preparation:

Pre-heat your oven to 180˚C/ gas4 and line an A4 baking tray with baking paper.

Place all of the dry ingredients into a mixing bowl and stir together.

Add the butter and mix the milk and eggs together, then add 1/3 of the egg mix with the butter and beat well.

Now add the next 1/3 beating well followed by the last 1/3.

Pour the batter into your tray slice the bananas quite thinly, placing them sitting up into the batter.

Drizzle the condensed milk over the top and then sprinkle the crumble topping over the mixture.

Bake for 40 minutes or until golden and cooked through.
