Chocolate Marshmallow Crispie Cakes

These are probably the easiest cakes of all, they do not even require any baking! I like to make them for movie nights or as a small gift for friends, they travel well so are also the perfect lunch box sweet treat!

Ingredients:

Makes 8” square tin

50g butter
150g marshmallow
100 ml whipping cream
125g chocolate (I used 46% Cocoa)
150g Rice Crispies

Pro Tip: If you have it a silicone pan is really good as the cake pop’s out really easily!

Preparation:

Melt in the chocolate

Melt in the chocolate

In a large saucepan, place the butter and marshmallows together and melt them on a low heat. Then add the cream and bring to the boil.

Remove from the heat and stir in the chocolate until it is fully mixed. Now stir in all of the Rice Crispies until they are all coated evenly.

Turn into a lined tin or the silicone one and place in the fridge for 1 hour to set.

Portion up and pack for lunch!

The cake can now be portioned up as you wish!

Pro Tip:Why don’t you treat them to some sparkle or sugar flowers, which you can find in all good supermarket.
