So you have almost everything ready for Christmas, everything except the Christmas Cake! Don’t worry marzipan and icing; a cake is quick and easy and the decoration is entirely up to you. There are so many lovely glittery and shiny cake decorations on the market now its hard to choose! 

For an 8” cake 

10” board
450g marzipan
450g sugarpaste (dr oetker is good)
some more rum
icing sugar for dusting
apricot glaze

Make your cake (see how to here) and place it in the middle of your board and genourously brush some more rum over the top and sides. Then brush some apricot glaze. 

Remove the marzipan from the packet and knead it lightly into a ball. 

Dust some icing sugar onto your work surface and roll the marzipan out to about 0.5cm thick, trying to keep it as round as possible. 

Now roll it up over your pin and lay it over your cake, smooth the top of the cake with the palm of your hand and the once that is smooth and stuck start to workon the sides, brushing the marzipan from the base upwards. 

Trim off the excess and push it into the base of the cake trimming excess as you go. 

Place the cake to one side and wipe down you work bench ready to ice your cake.

 Pro Tip: Repeat the same process with the icing, smooth it over with a cake smoother, if you have one for a really good finish. 

Pro Tip: If you would like to pipe onto your cake then you will need to make some royal icing… 


1 tablespoon egg white
5-6 tablespoons icing sugar 


Beat the two together with a spoon, add more icing sugar/ eggwhite until you have the desired consistency. 

Put it into a piping bag and pipe on your writing and pictures. 

Leave this to set and then with a paint brush, paint some edible dust (that has been mixed with a little alcohol) onto your cake. 

Wrap a ribbon round and enjoy! hope you all have a very Merry Christmas!
