Double Chip Choc Marshmallow Muffins

Lots of chocolate and then marshmallows as well!!! Yes that’s right, these beauts really do tick all the right boxes! Unfortunately these don’t keep particularly well so are best eaten the day they are made, or the day after. They are perfect for the fresh muffin folk and are great for a party or for taking into work.

Ingredients: The Muffins
Makes 10
225g plain flour
30g cocoa
150g caster sugar
½ teaspoon salt
100g milk
100g cream
100g melted butter
2 eggs
125g chocolate chips
5 mini marshmallows per muffin

Add the chocolate chips to the mixture and fold through

Preparation:
Pre-heat your oven to gas5 / 200˚C and have a muffin tin ready with cases in it.

Place all of the dry ingredients into a bowl and stir together.

Place the melted butter, milk, cream eggs and vanilla into a bowl and beat together.

Now pour the liquids into the dry and stir together, but only until it is just combined.

Now add the chocolate chips to the mixture and fold through.

Spoon the mixture into your cases ¾ full and drop the mini marshmallows on top and bake in the oven.

Fillthe case 3/4 full and add marshmallows

They will take about 25 minutes but leave in the tin for 10 mins after cooking before taking them onto the cooling rack.

Pro Tip: Do not over mix your batter, the least the better and the fluffier your muffins will be!
