The ‘woops I forgot to make a’ Christmas Cake!

The countdown to Christmas has begun and yikes, there is still so much to do! But don’t let lack of time put you off enjoying a homemade Christmas cake this year with your loved ones. This recipe is quick to make and the beauty is that it can be enjoyed straight away, it will be moist and luscious and packed full of all things Christmasy.

Ingredients: for a 8” deep tin 

350g chopped prunes
375g mixed dried fruit
175g butter
175g muscovado
175g honey
125g brandy/ or liqueur of your choice
2 oranges, juice and zest

1 teaspoon mixed spice
150g plain flour
75g ground almonds
½ teaspoon baking powder
½ teaspoon baking soda

3 eggs

Preparation:
Pre-heat the oven to gas2/ 140˚C and line your tin with baking parchment.

Place the top group of ingredients into a saucepan, bring to the boil and set aside for 30 minutes.

Mix together all of the dry ingredients together and fold into the warm mixture along with the eggs.

Pour the mixture into your tin and bake in the centre of the oven for 1 ¾ – 2 hours.

Allow the cake to cool in the tin. Once cool remove it from the tin and brush with more brandy. Finally wrap tightly in Clingfilm and tin foil, leave in a cool place until ready to ice…
