Lemon & Golden Syrup Sponge

You know those times when you need a quick dessert and you haven’t got one to hand? Well this sponge is ideal for those such occasions! It takes just 6 minutes in the microwave and I would say just 6 mins to prepare it… probably making this the fastest cake on record!

Ingredients:

Pro Tip: You will need a 1 litre glass pyrex bowl or plastic microwave proof one.

2 large eggs
130g caster sugar
130g self raising flour
130g soft butter
¼ teaspoon baking powder
3 table spoons milk
3 table spoons golden syrup
Juice half a lemon

Pro Tip: Make sure the cling film goes all the way down the sides of the bowl as the cake will expand and may push the cling film off otherwise.

Preparation:
Grease your bowl with a little butter and put 3 table spoons of the golden syrup at the bottom along with the lemon juice.

Put all of the other ingredients into a mixing bowl and beat until all combined.

Spoon into your bowl and cover with lightly greased cling film.

Put a slit in the top and put it in the microwave on high for 6 minutes.

Put in the microwave on high for 6 minutes

Remove the cling film and place a bowl on top to turn the cake out onto it.

Finally spoon 3 table spoons of golden syrup onto the sponge.

Pro Tip: Be careful when taking the cling film off as there will be a lot of steam

This cake is best eaten straight away and does not keep very well so warm up your custard and dig in!
