THE call came in last weekend. My good friend excitedly gave me a bell to tell me “the cherry tree is bursting with fruit, come and pick as much as you can!” One hour later I had almost too many to carry home (I can be a bit greedy)! I started to think about the many options that lay ahead for these little lush cherries, a fellow cherry picker was going to make a batch of cherry sauce to accompany duck, somebody else some jam… I knew I would make a cake (naturally)! but which direction should I take? Well, after much deliberation I bring you this beauty, The Morello Cherry Chocolate Cake!

makes 1x 8” cake with 3” sides

Ingredients: chocolate sauce
200g water
75g sugar
1 tablespoon glucose
200g dark chocolate

Preparation:
Break the chocolate into a heat proof bowl. Take the sugar, glucose and water together and bring them to the boil.

Next, pour this mixture over the chocolate and let it sit for 30 seconds. Stir it to combine and set it aside ready for pouring later.

Pro Tip: Making the sauce first will allow it to set and be perfectly ready for your cake
