I’m sure there is much wittier (and seedier) alternative than Passion Fruit Drizzle cake out there… I just don’t seem to be able to think of it (answers on a postcard please)! Otherwise, what can I say; this cake really is incredible! Please just make it and see for yourself!

Ingredients: The Cake
You will need a 9” round tin

3 eggs, large
200g sugar (vanilla if you have it)
145g plain flour
1 tablespoon cornflour
¼ teaspoon salt
¼ teaspoon baking powder
90g double cream
4 passion fruit seeds only
80g unsalted butter

Pour the mixture into the prepared tin

Pro Tip: Cut open the passion fruit and spoon the fruit into a sieve and push the pulp and juice through add the seeds to your cake batter.

Pre-heat the oven to 180˚C / gas mark 4 and line your tin with baking paper.

Place the eggs and sugar in a bowl and whisk for 5 minutes until thick and pale.

Combine dry ingredients mix well.

Melt the butter

Sift the dry ingredients into the flour and fold in using a metal spoon. Follow this with the cream and fold in the melted butter, finally adding the passion fruit seeds.

Pour into the prepared tin and bake for 40 minutes or until a skewer comes out clean.

Pro Tip: Once the cake comes out pour the juice from the seeds over the cake and leave to cool in the tin

Ingredients: The Icing

5 heaped tablespoons of icing sugar
1 table spoon water


Mix the ingredients together to form a paste, either adding more sugar or water until you get the consistency you want.
Turn your cake out, place it on to a serving plate and, with the tip of a spoon, drizzle your icing all over your cake.
