Ingredients: For the Figs
8 figs
250g port
75g sugar
peeled zest 1 orange
2 cloves 
4 black peppercorns
1 cinnamon stick

Preparation:
Bring all of the ingredients to the boil except the figs.

Cut a cross in the top of each fig and place into the boiling liqueur. Let them simmer for approximately 8-10 minutes and then leave to cool in the pan.

Pro Tip: Place the cake in the fridge for at least a couple of hours to firm up, you will then find it a lot easier to work with. 

Ingredients: For the Chocolate Icing
100g of the fig poaching liquer
120g dark chocolate

Preparation:
Place the liqueur into a sauce pan and bring to the boil.

Have the chocolate ready in a bowl, pour the liqueur over the chocolate and stir to melt and combine.

To finish the cake turn it upside down onto your serving plate and pour the icing over the top, decorate with the figs or serve alongside, how about warming the figs through and serving a slice with some ice cream.
