Rum and Raisin Chocolate Brownies

Chocolate brownies are liked by everybody, if you enjoy making something delicious for friends over christmas then theses brownies are a great choice, the rum and raisins give them the festive edge and they can be cut into bitesized portions and boxed up as presents.

Ingredients:

1 A4 sized baking tin
200g un- salted butter
250g dark chocolate
400g sort brown sugar
4 eggs
50g dark rum
250g plain flour
½ teaspoon bicarbonate of soda
75g cocoa powder
50g raisins
1 pinch salt

Top Tip: Bring your pan of water to the boil and then turn to the lowest setting before placing your bowl of chocolate over it. This will be the right temperature so that the chocolate doesn’t burn.

Preparation:

Pre-heat the oven to 160˚C/gas3 and line your tin with baking parchment.

Melt your dark chocolate and butter over a pan of hot water.

Mix all your dry ingredients together 

Whisk your eggs together with the rum

Once the chocolate and butter is all melted remove from the heat and stir in the eggs, stir in the dry ingredients and pour the mixture into your tin.

Cooking:

Bake for 30-35 minutes the cake should still feel a bit soft in the middle and sink a bit when it comes out.

Leave in the tin to cool, or eat one straight away!

Pro Tip: Make sure you do not overcook your brownies as they won’t have their signature gooey centre!
