Sticky Ginger Cake with Lemon Drizzle

Ginger cake with a twist? Yes you heard me! The lemon gives the cake a fresh zing that really works with the spicy depth of ginger. It also means that you could decorate your cake with some little sugar flowers or maybe even some glitter. As with most ginger cakes, it will improve with a day or two rest… come to think of it, the same goes for us!

Ingredients: The Cake
Makes 1x loaf tin or an A4 size tray

230g self raising flour
1 teaspoon baking soda
1 tablespoon ground ginger
1 teaspoon cinnamon
1 teaspoon mixed spice
110g unsalted butter
110g treacle
110g golden syrup
110g muscovado sugar
280g milk
1 large egg


Pre-heat the oven to gas4 / 180˚C and line your tin.

Place all of the dry ingredients into your bowl and mix together.

Whisk the egg with the milk. Then heat the treacle and golden syrup together.

Now add the butter to the dry ingredients with 1/3 of the milk and mix well to combine. Then add the rest of the milk, mixing well.

Leave to cool

Pour in the hot treacle mixture and mix to combine and then pour it into your tin and bake for 1 hour – 1 ¼ hours.

Cool in the tin and store in an airtight container until ready to eat

Pro Tip: as a little extra addition why not put some chopped crystallised ginger through it

Ingredients: For the lemon drizzle
Juice 1 small lemon
6 tablespoons icing sugar

Stir together until you have the right consistency, I would say it needs to be like the thickness of yogurt.

Add a little more lemon or icing sugar to achieve this.

Use your cake flair to drizzle the icing over the top and dot with crystallised ginger!

Pro Tip: If you are decorating your cake for an occasion then do so on the same morning, so it all looks fresh and lovely.
